Cheesy Broccoli Quinoa Casserole



         Whew does it feel good to be back! I loved taking time off to spend with the family over the holiday break. Today the boys officially went back to school and figured it was also time for me to come on here and share a recipe! I've got new recipes coming out of my ears at this point and can't wait to share them with you all. I've been baking bread like crazy and have so many wonderful loaves to share with you..so stay tuned for that!

Up first is this wonderful healthy casserole that I made ages ago and make on a monthly basis. You can swap the chicken out for ham or turkey or any of your veggie products. It's quick,cheesy and just delicious. I can't say enough positive things about quinoa and again if you haven't tried it yet.. DO IT! like right now!! I use it in place of almost all of my rice recipes and we just love it. So give this healthy and easy recipe a try this week!

Cheesy Broccoli Quinoa Casserole 

1-1/2 cups Uncooked Quinoa
1 Head Broccoli,cut into small florets
3 TBS Unsalted Butter
3 TBS All-purpose Flour
2 Shallots,diced
2 cups Milk of choice..I used fat free
1/4 tsp. Garlic Powder
1/4 tsp. Dry Mustard
1/4 tsp. Caynenne Pepper
Salt and Pepper to taste
2 cups (8oz) Shredded Sharp Cheese
2 cups Shredded or Diced Cooked Chicken

Cook quinoa according to package directions;set aside when done. Place the broccoli in a saucepan and add a couple of inches of water. Cover and bring to a boil over high heat. Let boil just 1-2 minutes more,until broccoli is crisp tender. Drain immediately and rinse in cold water to stop the cooking. Set aside.

Preheat oven to 400 or 200 celcius. Grease a 13x9 inch pan with nonstick spray and set aside.

To make the cheese sauce,melt the butter in a medium saucepan over medium heat. Whisk in the flour,shallots,garlic powder,dry mustard and cayenne. Continue whisking the mixture until it's light golden, about 1-2 minutes. Slowly whisk in the milk. Allow sauce to simmer,stirring often until the mixture bubbles and thickens,about 5 minutes. Remove from heat,whisk in cheese until melted and smooth. Season with salt and pepper.

In a large bowl,combine quinoa,broccoli,chicken and cheese sauce;mix gently until combined. Pour into prepared pan.

Bake 20-25 minutes,or until top is lightly browned

Yield: 8-10 servings
