Well..there is no denying this..we have snow!! We've got around 4 inches and thankfully it has slowed down a bit. My husband and I managed to make our way out and pick up supplies to carry us over this weekend and throughout the week ( and by supplies I do mean chocolate..and butter..but that's for baking:) On days like this soup is pretty much your friend.
As you can see from above..we ate the soup before it started to snow. However thats not to say we won't be eating this for dinner tonight along with my Farmhouse White Bread and possibly some chocolate and maybe even some peppermint marshmallows that I made lastnight and will post about next week!
So if you are in the mood for some cheesy soup with potatoes,ham,celery,onion and carrot..then this is for you. It's thick and oh so satisfying. Happy Weekend!
Cheddar Potato Chowder
2 cups Water
2 cups Diced unpeeled Red Potatoes
1 cup Diced Carrot
1/2 cup Diced Celery
1/4 cup Chopped Onion
1 tsp. Salt
1/4 tsp. Pepper
1/4 cup All-purpose Flour
2 cups Milk
2 cups (8ounces) Shredded Cheddar Cheese
1 cup cubed fully cooked Lean Ham
In a large saucepan,combine the first seven ingredients. Bring to a boil. Reduce heat;cover and simmer for 10-12 minutes or until potatoes and vegetables are tender.
Meanwhile,place flour in a large saucepan;gradually whisk in milk. Bring a boil over meadium heat;cook and stir for 2 minutes or until thickened. Remove from heat. Add cheese;stir until melted. Stir the ham and the cheese sauce into the potato soup. Stir until combined and thickened.
Yiled: 7 servings..1 cup has 212 calories
