Whole Wheat Buttermilk Chocolate Chip Muffins


       Did everyone have a good weekend? I was able to bake bread and even managed a walk through the woods. It's hit and miss with the sun but as long as it stays dry,I don't care what the sky looks like!

Here is a delicious muffin that takes hardly any effort to make. If you really want to take it to the next level,split the muffin open while its warm and smear peanut butter all over's delicious!!!

Whole Wheat Buttermilk Chocolate Chip Muffins

1/2 cup Brown Sugar
1 cup Buttermilk
1/3 cup Canola Oil
1 Large Egg
1 tsp. Vanilla
1 cup Whole Wheat Flour
1 cup All-purpose Flour
2 tsp. Baking Powder
1 tsp. Baking Soda
1/2 tsp. Ground Cinnamon;optional
1/4 tsp. Salt
1 cup Chocolate Chips

Preheat oven to 400 or 200 celcius. Grease a 12 cup muffin pan with nonstick spray and set aside.

In a medium bowl,whisk together the sugar,buttermilk,oil,egg, and vanilla.

In a large bowl, whisk together the flours,baking powder,baking soda,cinnamon, and salt. Slowly add the buttermilk mixture into the dry ingredients and mix just until combined. Gently fold in the chocolate chips.

Divide batter evenly among cups. Bake 15-20 mins,until the tops are golden brown and toothpick inserted comes out clean. Cool for 5 mins in pan before removing to wire rack to cool completely.

Yield: 12 Muffins
