Here is my next recipe using pumpkin. I actually really liked these bars. The original recipe calls them brownies but they aren't anything like it. They are infact a lovely moist bar or snack cake if you like.
I used whole wheat in the recipe but feel free to use all-purpose if thats what makes you happy. These aren't high on the calorie scale so cut yourself a little slice and enjoy!
Whole Wheat Pumpkin Chocolate Bars
1/2 cup Pumpkin Puree..I used a very heaping 1/2 cup
1 Whole Egg
2 Egg Whites
1 TBS Vegetable or Canola Oil
1 cup Whole Wheat Flour
1 tsp. Baking Powder
1 tsp. Unsweetened Cocoa Powder
1/2 tsp. Ground Cinnamon
1/2 tsp. Allspice
1/4 tsp. Nutmeg
1/4 tsp. Salt
2/3 cup Packed Brown Sugar
1/2 cup Semisweet Chocolate Chips
Pre heat oven to 350 or 180 celcius. Grease an 11x7 inch pan with nonstick spray;set aside.
In a large bowl,combine the pumpkin puree,eggs, and oil until smooth;set aside.
In a seperate bowl,mix together the flour,baking powder, spices,salt and brown sugar. Add the dry ingredients into the wet mixture and mix until thoroughly incorporated. Stir in the chocolate chips.
Pour into prepared pan and spread out evenly.
Bake 15-20 minutes or until toothpick inserted comes out clean. Cool completely on wire rack before cutting.
Yield: 24 Bars
