Fluffy Pancakes

Did anyone else watch the World Cup? what a bummer..we lost! oh well,thats how it goes. You win some and you lose some. It was amazing to watch everyone come together though and show their support.

Who loves pancakes! we sure do. I had planned on making the boys something special to mark their summer vacation but it's been sooooo humid! it's always a bit humid here but this summer has been a real killer for sure. I havent been cooking at all and what I have made are the standbys of salads,fresh fruits,sandwiches,and tons and tons of water. My kitchen is a nightmare to be in right now. However, I got up this morning and  made sure I had a nice breakfast for the boys. Pancakes are always a favorite and these fluffy ones are real winners. They are fluffy and moist..just perfect! You can add chocolate chips in if you like, but we like em' plain with my homemade Maple Syrup. Thanks to Life or Something like it for a winner of a recipe!

Fluffy Pancakes..Makes 12
1-1/2 cups Flour
1-1/2 tsp. Baking Powder
3/4 tsp. Baking Soda
3/4 tsp. Salt
1-1/2 cups Milk
1/4 cup Vegetable Oil
2 Large Egg,lightly beaten
1 cup Semi Sweet Mini Chocolate Chips;optional

Whisk all dry ingredients together except for chocolate chips. Add in milk,oil,and eggs and whisk just until combined..a lumpy batter makes fluffier pancakes:) Pre heat a griddle or large frying pan on medium heat. Brush oil onto pan or use nonstick spray.

Working in batches,pour 1/4 cup of batter per pancake into pan or skillet. If using chocolate chips,sprinkle about 1-1/2 tsp. onto each pancake. Cook until bubbles start to form on surface and the bottom is golden brown..about 1 minute. Flip pancakes over and cook for another minute. Serve warm with lots of butter and maple syrup!
