Hint O' Mint Cookies


I really like chocolate and mint. I really really reeeaaalllyy like it. Thank goodness I can purchase mint chocolate items here..atleast the dutch like that combo!! This is the first of two mint cookies I am going to post. This first one being more cake like than your typical crunchy cookie. There is an ever so lightly hint of mint in there and if you don't pay attention you could miss it. The chocolate frosting pairs well with the mint and makes a perfect dessert at the end of any meal.
This recipe comes from Taste of Home's Best Loved Cookies and Bars magazine. It has 265 recipes and I'm going to have fun this christmas season. I like to add a few new cookie recipes to my already favorite ones wich can be found Here and Here. Can you believe christmas is coming!!!!

Hint O' Mint Cookies..4 dozen
1/2 cup Butter; Softened
1 cup Sugar
1 Egg
1/2 tsp. Vanilla extract
1/4 tsp. Peppermint extract
2 cups Flour
1/2 tsp. Baking Soda
1/4 tsp. Cream of Tartar
1/2 cup Buttermilk

Frosting
3 TBL Butter; Softened
2 cups Powdered Sugar
1/3 cup Coco
1/8 tsp. Salt
1 tsp. Vanilla extract
2-4 TBL Milk

Combine the flour,baking soda and sream of tartar; set aside.
In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in egg and extracts. Add flour mixture into cream mixture alternately with the buttermilk, beating well after each addition. Cover with plastic wrap and refrigerate for 1 hour.

Pre heat oven to 350 or 180 celcius. Line cookie sheet with parchment paper and set aside. Drop dough by heaping teaspoons 2 inches apart. The directions call to flatten each cookie with a glass dipped in sugar. However mine flattened out fine by themselves. Bake for 8-10 mins or until set and lightly brown around the edges. Transfer to wire rack to cool completely.

To make frosting combine all ingredients and enough milk to achieve spreading consistency. Frost cooled cookies.
